Clean Eating Chocolate Glazed Cupcakes

Get.Your.Chcolate.Fix!  These are so good, they surprised me!  Gluten free and free of refined sugar and they really aren’t missing anything.  I’m serious!  I found this great recipe on The Gracious Pantry (she has a ton of great clean eating recipes) and I’ve pretty much been thinking about these gems for days.  Today, both kids are napping at the same time…so this is my chance!  I baked them. I ate them. Took a picture. Then ate more.  Oh, chocolate, how I love you!

Clean Eating Chocolate Glazed Cupcakes

Ingredients

cupcakes:

6 whole eggs
1/3 cup coconut milk  (I used regular milk)
1/4 cup honey  (I used maple syrup)
1/4 cup coconut oil
1/4 cup unsweetened apple sauce
3/4 cup almond flour  (I used oat flour)
1/4 cup coconut flour
1/2 tsp. baking soda
1 tsp. pure vanilla extract
1 tbsp. unsweetened cocoa powder

glaze:

1/4 cup unsweetened cocoa powder
1/4 cup coconut oil
1/4 cup honey  (I used maple syrup)

Directions

In a large mixing bowl, whisk together all the cupcake ingredients.
The coconut oil will leave clumps…just break them up the best you can with the whisk while mixing.
Pour batter into a greased muffin pan with each about 2/3 full.  I used muffin liners and they worked well.
Bake at 350 F. for approximately 22 minutes, or until a knife inserted into the center of a cupcake pulls out clean.
Set aside and allow to cool.
While the cupcakes cook, warm the glaze ingredients in a small sauce pot (I just microwaved mine for about 25 seconds), stirring constantly until the chocolate is fully melted.
Allow it to cool slightly, or until it reaches the consistency you prefer.
Spoon the glaze over the cupcakes.  Put them in the fridge to cool the icing or just eat them warm like I did!  I hope you enjoy!
