This chili is so easy and versatile…you can make it with ground beef, chicken, turkey, sausage, or no meat at all! If you don’t have poblanos, just add bell peppers or another veggie. You can pretty much add whatever you want to this chili, because it’s really all about the seasoning!
Spicy Poblano Turkey Chili
Ingredients
2lb ground turkey (93% lean)
1/2 large onion-chopped
2 Tbsp olive oil-for sautéing
2 poblano peppers-chopped
1 jalapeño pepper-diced
1 serrano pepper-diced
4-6 garlic cloves-minced
1 can tomato sauce
1 can diced tomatoes (with juice)
1 can beans (I used kidney beans)
2 cups chicken broth
3 Tbsp chili powder
2 Tbsp cumin
1 tsp black pepper
Directions
Saute the onion in the olive oil about 7-8 minutes on medium heat, then add the poblanos, jalapeño, and serrano and sauté another 5 minutes with lid on pot. Then add the meat and brown it with the onion mixture. Then add all remaining ingredients and simmer. I like to simmer for about 3-4 hours but this is not necessary! This can also be made in a crock pot. Also, I like to garnish this chili with a spoonful of sour cream(or plain greek yogurt), cheese and cilantro. Enjoy!
