I love breakfast. I love coffee. And I especially love waffles for breakfast…with my coffee. I created this recipe one morning because I was tired of boring, healthy breakfasts. I was craving pancakes, waffles, or anything that resembled a “bread-like” consistency! You see, I’ve been eating mostly Paleo and doing the 21 day fix workouts to tone up my post-baby body. I used a very ripe banana which resulted in a waffle that tasted very much like warm banana bread…hence the name! I’m totally going to throw in some chopped pecans next time. If you don’t care for the banana flavor, just use an un-ripened banana.
I threw a few ingredients into my blender, then cooked them in my waffle maker, and much to my surprise…they were ah-mazing! It only took a few minutes and made plenty of waffles to have leftovers for the next day. I just popped them in the toaster the following day and topped with some all-natural peanut butter and had a great breakfast as I was on my way out the door. Bonus!
- 4 eggs
- 1 very ripe banana
- 2 tsp baking powder
- approx 1/4 - 1/2 cup oat flour (to get the right consistency)
- 1 Tbsp vanilla extract
- 1 Tbsp cinnamon
- Blend all ingredients in blender. You may need to tweak the amount of oat flour to get the right consistency.
- Cook in a preheated waffle maker, per your maker recommendations.
- Serve warm, with maple syrup, chopped bananas, and some pecans. They are even great by themselves or topped with some all-natural peanut butter.
