I just happened upon a new product at my local grocery store recently…greek cream cheese. It’s a mixture of cream cheese and greek yogurt. It just sounds healthier, right?! I instantly thought to myself…maybe I can use this to make a “healthier” dessert tonight. I have a great Strawberry Pie recipe that is basically made with cream cheese, sour cream and sugar, so I used that recipe as my inspiration. I had fresh blueberries and strawberries in my refrigerator, but this would be great topped with any fresh fruit. If you are trying to stay away from sugar, you could even sweeten this with a few drops of stevia! Let me know what you think…
Greek Yogurt Cheesecake Parfaits
Ingredients
1 package (8oz) greek cream cheese (like this)
1/4 cup plain greek yogurt
1/8 cup sugar (or sweetener of choice, such as honey, maple syrup, coconut sugar, etc)
Directions
Using a hand mixer, whip all ingredients until creamy and smooth. Put 2-3 large spoonfuls into serving dish (I used mini mason jars) and top with your favorite fresh fruit. Enjoy!
