Cauliflower Pizza Crust…yes, cauliflower!

Let me start out by saying I do NOT like cauliflower.  I was hesitant to even try to make this, but I’m so glad that I did.  I love pizza…it’s one of my favorite foods, but it’s loaded with fat and calories that I don’t need!  This recipe is easy to make and my 2 year old devoured it!  The most important factor to getting a nice, crispy crust is to get all the water out of the cauliflower.  Oh, and if you have a pizza stone, that helps to make a nice crust also (but it’s not necessary).

Cauliflower Pizza Crust

Ingredients

1 large head cauliflower

1/2 cup freshly grated parmesan

1 egg, beaten

1 garlic clove – minced

1 tsp italian seasoning (or a combination of oregano, basil, rosemary, etc)

1/2 tsp salt

Directions

Preheat oven to 400 (place pizza stone in oven to preheat, if using one).  Cut cauliflower into several pieces and place in a food processor.  Pulse it until is resembles a coarse “rice” like texture.  I needed to do this in two batches.

Bring about 2 inches of water to boil in a pot and place cauliflower “rice” in the water and boil for about 5 minutes.   Strain the cauliflower and then transfer to a thin dishcloth to squeeze the rest of the water out.  Ring the towel and try to get as much water out as you can…this will help you get a nice, crispy crust.  Squeeze, squeeze, and squeeze again.

Mix the cauliflower with the egg, cheese, salt, garlic, and seasonings.  Use your hands…get messy!  Line a baking sheet with parchment paper (unless using a pizza stone) and press dough into a flat layer about 1/3 inch thick. Place in oven and cook for about 30-35 minutes.  Cook until it’s a nice golden brown.  (If using a pizza stone, place the parchment paper and crust right on to pizza stone.)

Once cooked, place your toppings on the pizza, turn oven up to 425 and cook additional 10 minutes.
