Every time I go to the grocery store I have to buy something fun to eat in the car on the way home, and it usually involves chocolate. I found something really special at the store today…something special enough to write about. Raw Chocolate Macaroons made by a company called Hail Merry that are raw, vegan, free of refined sugar and full of the health benefits of coconut oil. I might even call them healthy! After realizing how incredibly amazing they were, I decided that I must make these TODAY. After a quick google search, I discovered that someone has already done the hard work and is one step ahead of me. I usually alter recipes (because that’s what I do), but this time the recipe seems pretty perfect. I made these at a fraction of the cost and they are just as good…and surprisingly I had all the ingredients in my pantry. Make them…Eat them…and thank me later…
Coating them in coconut flakes is purely optional…but fun!
Raw Chocolate Macaroons
Ingredients
2 cup unsweetened shredded coconut
½ cup coconut oil
4-5 tablespoon cocoa powder (I used half dark and half regular)
¼ cup honey, coconut nectar, or maple syrup (I used organic maple syrup)
½ teaspoon vanilla extract
¼ teaspoon salt
Directions
Place all ingredients into a food processor and process until well mixed, scraping down the sides as necessary. You want to make sure all ingredients are incorporated, it will be thick!
Roll into little balls with your hands, put them on parchment paper and slightly flatten.
Chill in the refrigerator. Store in an airtight container, in the refrigerator or freezer.
