Meatball, Tomato, and Basil Pizza

Tried the cauliflower pizza crust again tonight…this time for the whole family. I’m happy to report that it received the husband’s approval (oh, and the 2 yr old)!  We love pizza and will now be eating it much more often!  I made a large batch of ground turkey meatballs today so we topped the pizza with meatballs, fresh heirloom tomatoes, and fresh basil.  Not too shabby!

Ground Turkey Meatballs

Ingredients

1 lb ground turkey

1 egg

1/4 cup fresh parsley – chopped

1 Tbsp dried onion flakes

2 cloves garlic – minced

1/2 tsp salt

1/2 tsp black pepper

Directions

I mix all the ingredients together in a large bowl, use a melon baller to scoop them out and cook them on a griddle for about 20 minutes, while rotating them.  They could also be baked in an oven on 350 for about 20-25 minutes.  (I usually double the batch and put some in the freezer for future use…spaghetti, anyone?!?!)  Cauliflower pizza crust recipe can be found here.
