These muffins are dang good and can be Paleo friendly by using Coconut flour instead of Oat flour. I use Oat flour in most of my gluten free baking because it doesn’t change the taste or texture. These muffins don’t even have added sugar and they will fool anyone! I found this great recipe on Paleo Grubs and made some modifications (because that’s what I do!) and this is what I came up with.
Clean Eating Oat Flour Banana Muffins
Ingredients
1/2 cup almond butter
3 ripe bananas – mashed
3 eggs
3 Tbsp coconut oil – melted
2 tsp vanilla
1 cup oat flour
1 Tbsp cinnamon
2 tsp baking powder
1 tsp baking soda
1/2 tsp nutmeg
1/4 tsp salt
Directions
Preheat oven to 350. Using a stand mixer or hand blender, blend the almond butter, bananas, eggs, coconut oil, and vanilla together. In a separate bowl, mix the oat flour, cinnamon, baking powder, baking soda, nutmeg, and salt together. Then add the dry ingredients to the wet ingredients and mix just until incorporated. Pour the batter into lined baking cups and fill about 2/3 full. I was able to make 12 regular muffins and 12 mini muffins. Cook for 22-25 min for regular sized muffins and 13-15 minutes for mini muffins. Enjoy!
**If substituting coconut flour in this recipe, only use half the amount.**
