I’m a serious breakfast lover. Every night before I go to bed I get excited thinking about the upcoming morning with my coffee and a warm breakfast. Yes, I know…that may be a sign that I’m getting old! (Or, maybe just that I’m a mom of 2 children ages 2 and under…) I’m so grateful to my husband that I get to stay home with our sweet littles and make a warm breakfast {most} every day! I’m also a pancake and waffle addict, and because I’m such an addict, I had to come up with a great-tasting healthy waffle recipe. I like these, because I can make a bunch and either toast them the next day or freeze them and toast them later. Well, yesterday I made an awesome blackberry honey glaze and it was so good that I had to recreate it to snap a photo and make a post about it…yes, it was that good! I originally saw a similar idea on pinchofyum.com and it looked so good and I’ve been wondering if it tasted as good as it looked. Since, I have been blogging about food, I have realized that just because someone makes their food look really good and tasty, does not always mean that it tastes good. Ha!
So, I topped my waffles with the blackberry glaze and also added some greek yogurt…yes, it was so good that I didn’t even need syrup!
Blackberry Honey Glaze
Ingredients
1 cup fresh or frozen blackberries
3-4 Tbsp honey (can also use maple syrup)
Directions
Heat the berries and honey in a skillet on low-medium heat until the berries start to simmer and begin to break down a little and make their own syrup. This only takes about 3-5 minutes. Allow mixture to cool just a little before putting on the waffles.
Greek Yogurt drizzle
1/4 cup plain greek yogurt
1 Tbsp milk of choice – just to make the right consistency
–Mix together and drizzle on top of blackberries and waffles. Enjoy!!
