Homemade Peppermint Patties {Paleo Friendly}

I’m trying SO hard to eat healthy…mostly because I’ve totally been eating whatever I want for the last month.  Chocolate, ice cream, cake, chips…you name it!  We’ve been away from home a lot (vacations, visiting family) and that makes it really hard to eat good.  I’ve been trying to mostly follow a whole30/Paleo diet and these little gems have Paleo written all over them!  They are easy, decadent, and fulfilling!  And, yes, I know this is still a dessert…but, I need something that’s a little healthier sitting around for when my chocolate craving calls!

Paleo Peppermint Patties

Ingredients

1/2 cup coconut oil
1/2 cup unsweetened, shredded coconut
1/8 cup maple syrup or honey
1/2 tsp peppermint oil (I used about 5-6 drops of my peppermint essential oil)
1 cup melted 72% dark chocolate 

Directions

Mix all ingredients (except chocolate) and make sure all the coconut oil is mixed in well (break up any large clumps).  Refrigerate mix for about 5 minutes to allow it to firm up a little.  Then, using a tablespoon, make patties out of the mixture and place in parchment paper.  I actually made mine a little smaller than tablespoon size.  (It’s better if you go ahead and form them into the shape that you want them to be…I made mine into balls and then tried to flatten into patties after they had been placed in freezer and they kept breaking).  After you have formed all the patties, place them on a pan or plate (on parchment paper) in the freezer for about 20-30 minutes.  Meanwhile, go ahead and melt the chocolate and allow it to cool a little.  After the patties are very firm, dip them in the dark chocolate and use a spoon to remove them and then place them back onto the parchment paper to cool and harden.  Store at room temperature or in the refrigerator…I prefer the refrigerator.  Hope you enjoy!!!
